Homemade Udon Noodles
whyyyyyyy can't I edit the post title? I suspect this is just pregnancy brain rearing it's dumb head and that the answer is real simple but... I can't be bothered to figure it out. ALAS.
HELLO ALL. Hope everybody is having a stellar week. This week, partially due to my body being like 'no, go lie down', I've been crocheting and watching 3%. Which is.. a show about immigration? Sort of? Basically some 20 year olds and the good place takes 3% of the people from the shitty place and they get to go live in the good place after competing in what is basically the hunger games but with logic puzzles.
I liked it? I know I'm supposed to think the revolutionaries are the good guys but I don't understand what they want. ALAS. When it comes back next year I'll tune in again, since it was realllll pretty.
Riverdale continues to be a very very strange show that's very compelling. One feels a bit.. sticky??? watching it. Makes sense. Sorry Not Sorry CW... but.. yeah. That kinda IS your thing.

Valentines day came and went! We had a tasty fondue (see instagram) and I made my husband a new bowling shirt. BOWLING SHIRT! Finally, a way to use this one metre of cute bunny fabric that I had but couldn't find a use for. I'll admit, these bunnies are a little... xfiles-y... they're kinda creeping up on you in the night. Still, it's real hard to find grown up man bunny fabric. I've become a bit of an expert at it.

Yesterday, I made udon noodles, following this neat recipe from La Fuji Mama.
Yesterday, I made udon noodles, following this neat recipe from La Fuji Mama.
It was SO FUN and like.. insanely tasty. INSANELY. TASTY.
The neat part was that, the dough is pretty high gluten, which makes it tougher to work with. There are various methods of dealing with this - you can get out the pasta maker, or knead until your wrists hurt (I wake up and they hurt so.. no), or you can smack the dough around, or put it in a breadmaker.
BUT NO! This recipe has you put the dough into a ziplock bag, then into a towel, and then you KNEAD IT WITH YOUR FEET. It makes so much sense, because you have so much more weight to work with (cough..) and then you roll it out and fold it back up again and put it back in the bag and knead it a few more times.

In the final steps, you roll it out, coat with flour, then roll it up into a burrito and cut into ribbons. EH VOILA! NOODLES! Which is a bit tedious if you don't add enough flour. (Note to self: add more flour)
Then you just simmer in a pot for a few minutes and VOILA! NOODLES!
I made a simple mushroom based asian broth with some dashi. Threw on some crumbled seaweed (leftover from sushi making last week, I toasted it with sesame oil) and a couple fried eggs and a dash of sesame seeds.
Honestly, have been thinking about these damn noodles all morning. They were THAT good.
A+. Go make some!!! The ONLY downside is that the dough needs to rest for 3-4 hours. That's an important step. But maybe on the weekend???
(My next step is figuring out how to make them.. tubes.. hmm...
